Butcher’s block - Nov. 27, 2013

By this time you hopefully have your shopping done, a few sides made, and your turkey in the smoker, unless you were smart and called Honey Baked Ham! So there isn’t really any time left for a quick last minute dish so today I will focus on what to do with all those Thanksgiving leftovers. While personally I am not a fan of leftovers, instead of just reheating a meal, I re-purpose it and don’t view it as leftovers! So here is a simple recipe that anyone, even after a Black Friday marathon shopping spree, can put together. Happy Thanksgiving!

Simple Turkey Salad

7 cups cooked chopped turkey, white and dark meat

3 stalks celery, chopped

2 cups lettuce, chopped

1 cup tomatoes, chopped

3/4 teaspoon salt

3/4 teaspoon pepper

1/2 teaspoon garlic powder

2 cups mayo

Simply mix all ingredients in large mixing bowl and serve! Great with crackers or as a sandwich.
