Butcher’s block - Oct. 16, 2013

As anyone who know me can truly attest, I am a creature of habit. I believe that many of us are, especially when it comes to cooking. We all get stuck in the same boring rut, or are afraid to try new things and I am the world’s worst. My wife is always urging me to try new things and so finally I did! So instead of the same spinach dip at your next party, try something new. I think you will agree, sometimes stepping out of the box is good!

Bacon Blue Cheese Dip

7 bacon slices, chopped

2 cloves of garlic, minced

1/3 cup half and half

2 (8 ounce) packages cream cheese

4 ounces crumbled blue cheese

2 tablespoons chopped fresh chives

3 tablespoons chopped walnuts, toasted

Cook chopped bacon until crispy, about 10 minutes. Drain bacon and set aside. Add minced garlic to pan and cook approximately 1 minute. Beat cream cheese until smooth with electric mixer. Add in half and half, beating until combined. Add in bacon, garlic, blue cheese, and chives. Spoon mixture evenly into 4 (1 cup) baking dishes. Bake at 350 degrees for 15 minutes or until golden brown. Garnish with toasted walnuts and serve with grapes and crackers.
