Butcher’s block - June 4, 2014

Schools out for summer! Finally, most all have made up those pesky snow days and are ready to embark on summer adventures. Sleeping in, lazy days by the pool, and late night movie watching. Well, for the kids anyway. Summer meals should be easy and fun and entertaining at its prime. So here’s to summer, time with the family, and those long summer days that will be gone all too fast.

Tequila Lime Chicken

1/2 cup Gold Tequila

1 cup fresh squeezed lime juice ( 6 Limes)

1/2 cup fresh squeezed orange juice (2 oranges)

1 tablespoon chili powder

1 tablespoon minced fresh jalapeno pepper ( 1 pepper seeded)

1 tablespoon minced fresh garlic (3 cloves)

2 teaspoons kosher salt

1 teaspoon black pepper

3 whole, 6 split, chicken breasts

Combine tequila, lime juice, orange juice, chili powder, jalapeno pepper, garlic, salt, and pepper. Add chicken breast to bowl, cover and refrigerate overnight. Heat grill and brush with oil to prevent sticking. Remove from marinade and salt and pepper chicken breast and place on grill skin side down for 5 minutes. Turn over and grill for approximately 10 minutes or until cooked thoroughly. Remove from grill and serve.

Grilled Peaches

1 stick unsalted butter at room temperature

1 teaspoon cinnamon sugar

2 tablespoons granulated sugar

Pinch of salt

Canola oil

4 ripe Arkansas peaches, halved and pitted

In a small bowl add the butter until smooth. Combine salt, granulated sugar, and cinnamon sugar and mix until combined. Heat grill to high and brush peaches with canola oil and grill until golden brown and just cooked through. Top with each with a few teaspoons of butter mixture. Garnish with vanilla ice cream and serve.
