Butcher’s block - Oct. 30, 2013

If my 5-year-old, Savannah, is anything it is a genius. It is apparent in every store that the holidays are on the way, so I am sure this is what prompted the ever so clever conversation. “Hey Dad, can you take a picture of all my beanie babies?” Savannah neatly gathers all her beanie babies and lines them on the couch. “Okay Dad, get your phone and take a picture.” I grab my phone and take a picture. “Why did you want me to take a picture?” And she replies, “Well now you know which ones I have so you can go buy the rest!” I must admit it was very well played, but also instilled fear of the dreaded holiday countdown. So while the shopping may be difficult and tedious, don’t let the cooking be! Here is another easy and simple holiday favorite sure to please!

Waldorf Salad

2 Granny Smith apples, cored and diced

1 Red Delicious apple, cored and diced

1 stalk of celery, diced

1 cup walnuts

1 cup golden raisins

1 1/2 cups dried cranberries

1 cup seedless green grapes, halved

1 cup seedless red grapes, halved

1 1/4 cup plain yogurt

3/4 cup mayonnaise

1/4 cup white sugar

1/3 cup brown sugar

3 tablespoons lemon juice

1/2 teaspoon ground cinnamon

In bowl combine apples, celery, walnuts, raisins, grapes, and cranberries. In separate bowl combine mayo, yogurt, cinnamon, white and brown sugar, and lemon juice mixing well. Pour mixture over fruit and toss to coat. I chill for approximately one hour and serve.
