Butcher’s block - Dec. 4, 2013

Thanksgiving is now behind us for another year, and it’s time to break out the tinsel and garland in preparation for the biggest holiday of the year, Christmas! I love Christmas but it is, however, a lot of work for a very short period of time. The decorations, the parties, the shopping, the gift giving, and of course the food! My favorite part of the holidays is all the homemade confections that people seem to bake and share. This is perhaps the easiest and tastiest recipe for fudge I have come across, so I hope you enjoy!

Peanut Butter Fudge

2 cups sugar

2 tablespoons butter

3/4 cup evaporated milk

1 teaspoon vanilla

2 cups marshmallow cream

2 cups peanut butter

Grease an 8x8 inch pan. In medium saucepan, over medium heat combine milk, sugar, and butter and bring to rolling boil for 5 minutes. Make sure you boil for exact time, if not boiled long enough the fudge will taste grainy. Remove from heat and stir in vanilla, marshmallow cream, and peanut butter. Pour into pan and let cool. Cut into squares and serve.
